My name is François Séguin, also known as "The Upland Cook." I am a passionate upland hunter and an avid cook, striving to take the concept of bringing field to table to the next level. Hailing from the beautiful province of Québec, Canada, I have built a life around my love for hunting, cooking, and training my faithful companion, Cooper aka "Le Chien à Séguin" a charismatic Wirehaired Pointing Griffon.
Ever since I can remember, the call of the wild has echoed in my heart. The thrill of exploring the vast uplands, the adrenaline rush when Cooper points at a covey of birds, and the crackle of a roaring fire at camp—all these experiences have shaped my identity.
But it was in the kitchen where my true passion ignited. Inspired by the bounty of our local ingredients, I set out on a culinary journey, seeking to create memorable meals that showcase the flavors of our region. From the succulent grouse breasts to the aromatic wild mushrooms, every ingredient tells a story of the land we call home.
As I honed my cooking skills, I realized that my passion for training pointing dogs complemented my culinary endeavors. Cooper became my trusted partner in the field, his keen senses guiding us to the finest game birds. Together, we have mastered the art of the hunt and the joy of working as a team.
Through my blog and social media platforms, I aim to share my adventures, recipes, and insights with fellow food enthusiasts and outdoor enthusiasts alike. I hope to inspire others to embrace the rich traditions of field-to-table cooking, encouraging them to connect with the land and the animals that sustain us.
